Need a little treat for a hot evening this summer? Got two ingredients and one hour? Yes!
Frozen Yogurt Covered Blueberries
Ingredients:
Pint of blueberries
1 cup vanilla yogurt
Directions:
1. Wash and dry blueberries.
2. Place 1 cup vanilla yogurt in a bowl.
3. Pour blueberries into yogurt and make sure all blueberries are covered in yogurt.
4. Using a skewer, carefully take out each blueberry and place on a plate that is covered in parchment paper.
5. Once all blueberries are on the parchment paper, place plate in freezer.
6. It will take between 1 hour and 2 hours to get the yogurt to freeze.
7. Enjoy frozen. Frozen berries can be placed in a sealed container and kept in freezer for easy treats!
These are some tricky desserts – my kids feel like they are having a frozen dessert when in actuality they are enjoying some fresh blueberries and protein packed yogurt. Yum!!

I have made something similar in the past. I used yogurt and made little "disc" shapes, then inserted a blueberry in the center. They froze quickly and made a delicious afternoon snack. I like that I can use any variety of yogurt.
