Pizza Time…Dinner Time! Nailed It!!

We are about a month into the school year now, crazy, it is going fast just like the summer did.  Now, I would love to tell you that I am totally rocking this school year and new schedule, but I am finding ways to make everything easier.  My biggest after school challenge is dinner time.  I am sure you can all agree with me; most evenings, dinner is challenging.  Finding recipes that the kids like and don’t complain about and recipes that don’t have me in the kitchen for an hour can be difficult.   
Both Jude and Teagan love pizza and honestly we have pizza at least once a week in our house.  It is easy and on budget, plus I can create some great fresh side dishes that the kids like as well.

If you look in our deep freezer you will find a number of different Red Baron® pizzas.  I enjoy stocking up on a few of our favorite toppings like 4 Cheese and Hawaiian and Sausage.  Jeremy and I don’t always agree on what kind of crust to get, which is why we love the Red Baron® Classic Crust, it is not too thick and not too thin, the perfect crunch on a perfectly baked pizza.  Yum!

Before school started I knew we would need some easy dinner time options because, hello crazy schedule.  So, I headed to Target to find the Red Baron® pizzas in the freezer aisle.  So many great options for any type of pizza lover.  
The next objective I have as a mom after school is building a meal.  Sure the kids would be fine with just pizza, but we do have to provide them with a little bit of nutrition on our pizza nights!  I love making fresh side salads to pair with pizza because they are always easy to make, but also make for a great cold side dish with the freshly baked pizza.

Avocado, Tomato and Cucumber Salad Recipe

Ingredients:
1 Cucumber – diced 
Cherry Tomatoes – sliced in half
1/2 red onion – diced 
Avocado – diced 
1/2 Cup Mozzarella pearls 
2 TBSP Olive Oil
Black Pepper to taste

Directions:
1.  Clean and dice a cucumber into bite size pieces.  Place into a large bowl.

2.  Slice cherry tomatoes in half and place into the bowl with the cucumbers.

3.  Cut up the red onion and add to the bowl.  Using a wooden spoon, stir all of the veggies together carefully.

4.  Carefully cut the avocado into bite size pieces and place in bowl.

5.  Add mozzarella to the bowl as well.  Using the spoon, combine the avocado and mozzarella into the salad.  Do not over stir, the avocado will break apart if you do this.

6.  Drizzle olive oil over the salad and add pepper if desired, once again, stir carefully. 
7.  Let salad chill in the refrigerator for about 30 minutes before serving.  Enjoy cold!

This salad is so good because it is filled with fresh veggies and mozzarella cheese.  It really is the perfect light side dish for Red Baron® pizza night.  While my kids are not big fans of the onion, everything else in this salad they gobble up!  Mom wins on that one – veggies down the hatch!!

You might see our fun rainbow plates, it is a tradition in our family to get fun paper plates and napkins when having a pizza night.  The kids love this.  Usually I let them take turns picking what kind of plates to buy.  While we are not big on using paper plates, I have to admit, it makes clean up just a bit easier on those super busy nights!  Mom win!

While we love the Red Baron®, I love the Red Baron® Baroness even more! She is a real mom who has real mom challenges but she has patches to show those challenges she has overcome. She is our #WingMama who helps busy moms find humor in the often hectic moments of motherhood. Love this, because I need a little humor in this journey of motherhood! Being a mom is a hard job, sure it is rewarding, but every day there are new challenges we must overcome. We earn those patches!

I have never been a “Clean Plate” mom but when the kids get through a meal with our complaining over and over about what I made or how something looks or smells or feels…seriously, I could go on and on, I feel like I totally NAILED IT with dinner time!
The Baroness patch that I earn when breaking open a frozen Red Baron® pizza is the “Nailed It” patch.  Dinner is easy from start to finish!!  Teagan is our kid that struggles the most at dinner time.  I should start counting how many times I say “EAT!” during the week.  Oh my gosh, lady!  So, when I get out the fun paper plates and napkins and have a fun pizza party dinner with Red Baron®, I earn that patch!

    My all-time favourite salad right there! I make that at least once a week! You can never go wrong with pizza…we are living in Italy at the moment so you can imagine how much pizza we eat!!

    This looks like such a great family dinner and SO easily prepared! My kids LOVE a fresh salad with all their favorite pickings, like cucumbers, cheese and tomatoes! Going to have to take your lead and grab some pizzas, too!

    There is never a bad day for pizza in our house. I love when I can just pop it in the oven, and know that it will be served hot when everyone is ready. Your salad looks and sounds delicious too. Way to go!

    Red Baron is one of my husband's favorite pizzas! We try to keep a meal or two in the freezer to pop in the oven as needed.

    Nothing beats a tasty pizza and a good salad – and yours looks delish! Red Baron is one of our favorite at-home pizzas. And I love the ease of making it!

    We love having pizza on Fridays. If we're too tired to make it from scratch, we'll using grab something like Red Baron. Next time, we'll have to give your salad a try, too. It looks really good!

    We eat pizza way too often. I try to add a salad but sometimes nobody is in the mood for lettuce or spinach. This avocado, tomato, and cucumber salad would be a great alternative way to get in my favorite veggies.
