A few years ago, I would have never admitted that I actually like to cook and bake. I found a new passion but my passion has to allow me to create delicious food with out a ton of work. Sure, I like being in the kitchen cooking up something great for my family but I do not want to be in the kitchen all day long!
This One Pot Beef Stroganoff recipe is a perfect example of a great dish that my whole family loves but I didn’t spend hours preparing it! Oh and because it is a one pot recipe…less clean up! Add this recipe to your meal plan this busy holiday season. A perfect warm comfort food dish.
One Pot Beef Stroganoff
Before I share my recipe, I want to clarify that the recipe does call for mushrooms, but we cannot eat mushrooms in our family so we simply just skip the mushroom steps when we make this recipe.
Ingredients:
3 TBSP oil – I use extra-virgin olive oil
½ cup diced onion
2 cloves garlic, minced
1 lb ground beef
2 teaspoons paprika
4 cups beef broth
8 oz rotini pasta or any pasta of your choice
½ cup sour cream
8 oz crimini mushrooms, sliced
salt and pepper
fresh parsley, for serving

Directions:
1. Heat about 1 TBSP of oil in a large skillet or pot of your choice. Add the mushrooms to the warm oil and cook until they are tender.
2. Once mushrooms are cooked, remove them from the pot and set them aside.
3. Add onion and about 2 TBSP of oil to the skillet and cook the onion at medium heat until translucent. Add salt and pepper to taste.
4. Stir in minced garlic. Let cook for about 2 minutes.
5. Carefully add in the ground beef and break it up with a spoon as it cooks. Brown beef and continue to stir skillet mixture while cooking.
6. Sprinkle paprika over the mixture and stir in completely.
7. Pour in beef broth and pasta. Bring the mixture to a boil. Once at a boil, cover the pot with a lid.
8. Let pasta cook until al dente. This takes about 15-17 minutes.
9. Once pasta is cooked, remove pot from heat and carefully stir in the sour cream and mushrooms.
10. Serve while hot and top servings with parsley. ENJOY!
Note – we do not eat mushrooms, simply skip the mushroom steps.
Delicious!! This stroganoff recipe is really creamy and yummy. Even with out the mushrooms we find that this dish is totally filling and perfect for a dinner. Oh and if you are like us and love some leftovers for lunch at work the next day, this dish makes plenty!
