Well, here we are. Back into the swing of things now that the holidays are over. I don’t know about you, but I feel like our family has a harder time getting back into the school routines after winter break than we do after summer break. I am not really sure what the deal is but to be honest, our mornings are stressful, rushed and not fun. I struggle in the morning, mostly because I would love for school to start at 9am rather than 8am – man that extra hour would be amazing. Delicious, Fast and Easy Breakfast Toasts

We have the juice covered for breakfast and now it is time to think about some nutritious and kid-friendly recipes that are simple for the morning rush. My kids love toast, but they get pretty tired of just toast with jelly, so I decided that I would try the trendy idea of Breakfast Toasts for the kids. Guess what? That trend was a hit in our house! YUM!

Berry and Cream Cheese Breakfast Toast

 
 

Ingredients:Whole grain bread – toasted
Cream cheese
Strawberries – halved
Blackberries

Directions:

1. Toast bread to your desired color.

2. Carefully spread a layer of cream cheese on the toast.

3. Add a few strawberry halves and blackberries to the cream cheese.

4. Optional – add chia seeds for some texture and additional nutritional benefits.

Peanut Butter, Banana and Raisin Breakfast Toast 

Ingredients:

Peanut butter (or any “butter” of your choice)
Banana slices
Raisins
*optional – honey

Directions:

1. Toast bread to your desired color.

2. Spread a layer of peanut butter on the toast.

3. Place banana slices over the peanut butter.

4. Sprinkle raisins over the toast.

5. Optional – drizzle some honey over the toast.

After both of these simple breakfast toast recipes were such a hit with the kids I am really excited to try some other ideas. I think this is a great way to get some fresh items into our daily routine and hopefully help all of us start our mornings off right.

    The toast with bananas and peanut butter looks and sounds so delicious! I am a huge advocate of probiotics. I feel so much better now that I am taking them daily.

    What a great way to focus on both the physical and emotional health of your children! Those precious minutes they have with us at home each morning set the stage for their entire day. And it's up to us to do everything we can to make those minutes nurturing and full of love. A fun, nutritious breakfast is a great way to do that.

    I love your idea of breakfast! My kids love juice so it will be easy to change. And I am sure they will love the peach passion fruit taste or ananas and mango. And making healthy toasts seems to be easy and quick!

    We're the biggest suckers ever at our house for toast with pretty much anything on it. For me, it started when I was a kid with cinnamon sugar toast (buttered allll the way to the edges!) By any chance do you remember the issue a couple of years back when Bon Appetit featured toast and how to top it? I've tried them all and they're super fun (and delicious).
