Do you ever feel like you are running out of wholesome and kid approved dinner ideas? I sure do! Over the years I have found that we get into a meal plan rut, we find our comfort and do not leave it. Sure, it makes the whole planning thing easier but I find that it usually brings more dinner time fights and complaints – which if you are like me, cut to the soul! Seriously, hearing “I hate this meal!” from my kids is hard for me to hear. I guess I need to not take things so personal! HA! As I was feeling us creep into that meal plan rut I decided to switch things up a bit with a recipe that both of my kids LOVE!
Easy Fish Parmesan Casserole
Servings: 6
Total Time: 30 minutes
Ingredients:
6-8 Gorton’s Beer Battered Crispy Fillets, frozen
1 jar of Spaghetti Sauce of choice – I used a Garlic and Mushroom
1 cup Shredded Mozzarella Cheese
1/4 cup Shredded Parmesan Cheese
1 cup Panko Bread Crumbs
10 ounces Spaghetti noodles
Directions:
1. Preheat oven to 425 degrees and prepare a 8×8 casserole dish with cooking spray.
2. Carefully spread a thin layer of Spaghetti sauce into the dish.
3. Place 6-8 Gorton’s Beer Battered Crispy Fillets into the casserole dish and sauce.
4. Pour the remaining Spaghetti sauce over the fillets and cover completely.
5. Sprinkle the Shredded Mozzarella Cheese and Shredded Parmesan Cheese evenly over the sauce and fillets.
6. Top casserole with Panko bread crumbs and cover dish with foil.
7. Bake Fish Parmesan Casserole for 20 minutes covered. And then uncover and bake for another 5 minutes.
8. While casserole is baking, prepare the Spaghetti noodles as directed on package.
9. Once Fish Parmesan Casserole is cooked properly, place Spaghetti noodles on a plate and place a heaping spoonful of Fish Parmesan Casserole over the noodles. Enjoy Fish Parmesan Casserole hot and with pasta and garlic bread!

When preparing to make this recipe I knew I had to head to Walmart to pick up our favorite beer battered fish fillets from Gorton’s.
