Like most of the world, the first part of the year we are really focused on starting new and making healthier choices when it comes to our meal preparation. In addition to meal planning every week we have made it a point to add new and healthier options to our recipes. Black Bean & Salsa Chicken Casserole
Ingredients:
1 cup frozen corn, thawed
16 ounces salsa
1 can of S&W Black Beans, rinsed
1 cup uncooked white rice
1 cup chicken broth
1 TBSP chili powder
1 tsp oregano
2 pounds chicken breast – cut breast into 3-4 pieces
1 cup shredded cheddar cheese
1/4 cup green onions, chopped
Sour Cream (optional)
Directions:
1. Preheat oven to 375 degrees.
2. Drain and rinse S&W Black Beans.
3. Add corn, salsa, black beans and rice to a large casserole dish. Using a spoon, mix together all of the ingredients.
4. Carefully pour in chicken broth and stir in chili powder and oregano until everything is evenly combined.
5. Place chicken breast pieces into the mixture in the casserole dish.
6. Cover dish with foil and bake for 1 hour at 375 degrees.
7. Once baked, remove dish from oven and sprinkle cheddar cheese and onions over the casserole. The cheese will melt perfectly if sprinkled on the dish immediately.
8. Serve hot and top with sour cream if desired. Enjoy!

Salsa seems to be a great go-to for making quick and yummy dishes. I love salsa, but it took some getting used to at first. I think I will try this with my family over the weekend!
