A few weeks ago I was at a friends house working on the school’s upcoming fundraiser. We decided we needed to stop for some lunch and she pulled out a freshly made batch of Egg Salad. We sat down and enjoyed that delicious egg salad on bread and I instantly decided I had to pick up some eggs to hard boil on the way home. YUM! I love egg salad and usually I only enjoy it after Easter by using our left over dyed eggs. I am not sure why I don’t enjoy egg salad more often but that is changing now that I have, in my opinion, created the perfect egg salad recipe. Bonus…it is a super easy egg salad recipe as well.
Easy & Delicious Egg Salad Recipe
Ingredients:
6 hard boiled eggs, sliced
2-3 stalks of celery, chopped
3 TBSP onion, finely chopped
1 TBSP Dijon mustard
1 TBSP Yellow mustard
1/2 cup Mayo
1 tsp lemon juice
1 tsp salt
1 tsp pepper
1 tsp celery seed
Bread for sandwiches
Directions:
1. Chop onion and celery and add to a medium bowl.
2. Slice hard boiled eggs and add to the medium bowl.
3. Add mayo, mustards, lemon juice, salt, pepper and celery seed to the bowl and carefully combine all ingredients.
4. Do not over mix as you do not want to squish the eggs too much.
5. Spread egg salad over bread and enjoy!
This recipe can be made and enjoyed a few days. Just keep egg salad in a closed container in the refrigerator. I have been enjoying this easy egg salad recipe on sandwiches for lunch. It is so good and a really easy recipe to enjoy for lunch. Pair it with some chips or pretzels and you are set!

Egg salad is looking tempting. It is perfect for breakfast. I would love to make it.
I am not always a fan of egg salad but there’s something about your recipe that’s totally tempting me to give it a second chance. Maybe it’s all of the celery that’s in it? I’m a huge fan of veggies so that could be it!
I love egg salad and i’m always looking to mix it up a little. This looks delicious and i think my husband would like this one too. I do have a problem eating the hard boiled eggs as I am going. 🙂 I may have to make extra!
This is almost how I make mine; I use the dry dijon and no onions. The latter is for dear hubby, but I think I would *love* it with onions.

Chicken Salad and Egg Salad are my favorites during the spring and summer months. I’ve never tried it with mustard though but seeing your pictures I have saved it and will be. I love dijon mustard too.

I haven’t made an egg salad in ages!! I’m not a huge fan of celery but strangely enough I do like it in egg salads. I also add tabasco and mashed avocado!
