 These delicious fresh orange oatmeal muffins are the perfect healthy breakfast recipe.  Baked with whole wheat flour, oats, and topped with fresh orange slices.

Does anyone else struggle with what to make your family for breakfast?  Sure, we have cereal days, toast days and occasionally pastry days but the challenge I have is making sure that the breakfast that I provide for my family is not only delicious and “fight free” but also filled with wholesome ingredients.  To find the perfect breakfast options I have started to revamp some of our favorite muffin recipes and switch out some of the ingredients to healthier options as well as adding oats and fresh fruits.  One of my favorite recipes so far has been an Orange Oatmeal Muffin.  So good and really perfect for the changing season of springtime!

Orange Oatmeal Muffins

Like I said, I have been trying to replace certain ingredients with healthier options. One example is using Greek Yogurt and whole wheat flour in the muffin batter but probably my favorite and most surprising switch is by using Armour Premium All-Natural Lard instead of oil or margarine.

Stop the Lard Hate

Yes, I feel it, I see it, I know you are questioning my switch mostly because of that word LARD.  Over the years I have felt like lard has been looked down on but the fact is, lard is one of the healthiest cooking fats.  Yes, it is true and you can use the Armour Premium All-Natural Lard in your baking but also for frying and sautéing.

Lard is a better source of monounsaturated fats than butter, coconut and corn oil which means it can help you lower your LDL cholesterol while enjoying your favorite recipes! Plus it has less saturated fat than butter and no trans fat like shortening. I helped you learn something today didn’t I?!  In addition to these health facts the brand I love using, Armour Premium All-Natural Lard, is gluten free and flour-less so it will not change the consistency or flavors of your recipes.

So, while the word Lard is not the most attractive word I am happy that lard can be used to prepare some of the most delicious, healthy and beautiful recipes.  Time to get baking!

Ingredients:

1 1/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup orange juice
1/2 cup Armour Premium All-Natural Lard, softened
1 1/2 cup whole wheat flour
1 cup rolled oats
2 tsp baking powder
zest of one large orange
1 tsp salt
1 cup plain Greek Yogurt
Fresh orange triangles, optional

Directions:

1.  Preheat oven to 375 degrees and prepare muffin tins with liners.
2.  In a medium mixing bowl whisk together sugar, egg, orange juice, Armour Premium All-Natural Lard, and vanilla.
3.  Add flour, oats, baking powder, orange zest and salt and stir to combine.

4.  Once combined add the Greek Yogurt and mix well.

5.  Carefully fill each liner with about 1/4 cup of batter.
6.  Bake at 375 degrees for 20-22 minutes.
7.  Enjoy warm!
**These muffins do freeze well.

These muffins are the perfect breakfast item to give my family.  They are sweet but not too sweet and they are filled with whole ingredients that I feel great serving them.  I know with the whole wheat flour and oats they will be full and ready for a great day.  I love that the Armour Premium All-Natural Lard helps us makes healthier choices this year.  I found Armour Premium All-Natural Lard in the baking aisle at my local Walmart.  On your next shopping trip make sure you pick up a container and try the switch!

Orange Oatmeal Muffins

These delicious fresh orange oatmeal muffins are the perfect healthy breakfast recipe.  Baked with whole wheat flour, oats, and topped with fresh orange slices.

Ingredients

  • 1 1/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup orange juice
  • 1/2 cup Armour Premium All-Natural Lard softened
  • 1 1/2 cup whole wheat flour

Recipe Notes

**These muffins do freeze well.  Keep in a freezer friendly container for optimal freshness.  

After making these muffins I have big plans to make some more of our favorite muffin recipes but will be adding Armour Premium All-Natural Lard, whole wheat flour and oats.  I love that these are so easy to make in batches and then freeze for those super crazy school mornings.  I am excited to have found this healthier option for our cooking and baking needs.

    These muffins sound so bright and yummy, perfect for breakfast or a snack. My favorite muffins to make and eat are gooey chocolate chip. They are basically a giant cupcake . . . so good, especially warm out of the oven!

    I love eating muffins for breakfast. They are quick and fast when you need to get up and get out of the house on time. I have never had an orange muffin before. I bet it is tart and tangy! I can’t wait to give this recipe a try!

    Oh my gosh, I am dying to make these. Although I cannot replicate this exact recipe since I have allergies and dietary restrictions, I will find a way to make this. I love fruity desserts and snacks.

    These look delicious and I’m sure that the orange in them makes them so light and refreshing! I love using lemon and orange zest in baked goods. Come to think of it, I add them mains as well, light pastas and risottos.

    I gotta say, I rarely see orange in baked goods or pastries so this is quite interesting for me! You bet that I’ll try to do this myself since I’m curious about the flavor. But either way, you made it look so appetizing that I’m already craving for it!

    Oh wow! First, I love orange so I’m gonna be making this but second, I do use lard for my red velvet cupcake recipe, amso I’m gonna try that premium all-natural lard. Thanks for featuring it, I get to try a healthier alternative.
