Okay, but let’s talk about how to choose the meat you are deciding to prepare for dinner on those busy weeknights. And now for the fun, I am ready to share a recipe that has become a family favorite in our house and can be prepared in about 30 minutes! Seriously! So, Smithfield® gets it, there are days that the idea of preparing a meal for the family can be totally overwhelming. Instant Pot Pineapple Pork Tenderloin
Ingredients:
Smithfield Slow Roasted Golden Rotisserie Pork Tenderloin
1 Bell Pepper (I used a yellow one), diced
2 bunches of green onions, sliced
2 TBSP Olive Oil – divided
20 ounce canned pineapple chunks in juice
2 TBSP minced garlic
2 TBSP ginger paste
Salt and Pepper to taste
White Rice
Directions:
1. Drain pineapple juice from canned pineapple reserving the juice for later.
2. Prepare bell pepper and onion.
3. Turn Instant Pot on and select Saute mode. When pot is hot add 1 TBSP of olive oil to pot.
4. Add garlic, ginger, peppers and onions to the pot and saute for 3-4 minutes.
5. Once veggies are tender, remove from pot and set aside for later.
6. Add another TBSP of olive oil to Instant Pot and let oil get hot.
7. Once hot, add the Smithfield Slow Roasted Golden Rotisserie Pork Tenderloin to the Instant Pot.
8. Pour about 3 TBSP of the reserved pineapple juice into the pot.
9. Top pork with the pineapple chunks and add salt and pepper to taste.
10. Press cancel on the Instant Pot and secure the lid to the Instant Pot carefully.
11. Select High Pressure and cook for 20 minutes.
12. While pork is cooking, prepare white rice as directed on the package.
13. When the time is over, let the pressure release on its own for 5 minutes.
14. Carefully turn the valve to Venting to release any extra pressure and then remove the lid.
15. Add cooked veggies to the pot for a few minutes and then start assembling your meal.
16. Place cooked rice on a platter, slice pork in even slices and add to the bed of rice. Scoop veggies and pineapple out of the pot and place over the cooked pork.
17. Serve pork with rice, veggies, pineapple when HOT. Enjoy!!

This looks and sounds delicious. I bought an Instant Pot about five months ago, and have still not used it. I really need to get over my worries and just try it. I keep seeing so many recipes on line.
You had me at pineapple. But then seeing that this is a simple Instant Pot recipe. YES! That makes it a winner in my books. My son in law isn’t fond of meat cooked with fruit but I just made him a pork dish with peaches that he loved so I bet I could win him over with this recipe too.

This looks fantastic! I’ll be honest and say I haven’t used my Instant Pot much after a scary incident where the lid came off too soon. Luckily I had a high potholder covering my hand and arm or that situation would have ended very differently. I definitely need to get back into using it though because there are so many amazing looking dishes, like this one!

It seems like there is not enough liquid to build up pressure. Is there supposed to be more liquid?
Maybe it is because of the marinated pork we use but it seems to be plenty with the pineapple juice and oil. If you are concerned you could always add more of the pineapple juice from the can.
