Sun’s Out Grills Out! Don’t you love this time of the year? Trees are blooming, beautiful evening weather and grilling out is permanently added to the weekly meal plan. I don’t know about you but when “grilling out” is on our meal plan, I am even more excited to prepare meals. We have our favorite go-to family meals and I also find that I get a bit more creative when the meal includes the grill. One of my favorite recipes we enjoy this time of the year is a Grilled Chicken Caprese made with Tyson® All Natural Boneless Skinless Chicken Breast. Delicious grilled chicken topped with fresh mozzarella, basil and tomatoes.
When I start preparing for this summertime grilling season, I make sure that I head to Target to stock up on Tyson Fresh Chicken because it is the easiest way to bring the party to your grill. Tyson Fresh Chicken is a perfect way to celebrate summertime gatherings, parties and holidays. Now it is time to get creative with your grilled chicken recipes and blow your guests away at your next summertime grill out.
Once we feel the summer come on we find ourselves enjoying our backyard a lot. A few months ago we had a major upgrade to our backyard by adding a privacy fence. This was a huge investment and change as our yard backs up to a walking path, so now that our space is actually OUR space we are excited to really enjoy our backyard even more. This is why we love grilling our meals during this season. It allows us to all be outside while dinner is being prepared and still enjoy everyone’s company.
Having backyard gatherings is one of my favorite things to do with our family and friends. Just enjoying the weather, the company, the yard and especially the food. Now, even though grilling makes meal prep easier, I do not want to be the host feeling like she is missing out on the backyard fun when we have family and friends over. So, I have to find grilling recipes that are simple and delicious but different than your typical BBQ meals.
One of my favorite grilled chicken recipes to share with my guests is a Grilled Chicken Caprese. This brings a bit of class to your grill but is a recipe that is family friendly and kid approved. Not to mention it is an easy recipe that will allow you as a host to enjoy your guests and the beautiful weather.
Grilled Chicken Caprese
Ingredients:
Tyson All Natural Boneless Skinless Chicken Breasts
2 cups balsamic reduction
Fresh mozzarella – sliced
1 cup fresh basil leaves – chopped
2 cups grape tomatoes – sliced
Brown rice
Directions:
1. Prepare your chicken by placing the Tyson All Natural Boneless Skinless Chicken Breasts in a resealable bag and add 1 1/2 cups of balsamic reduction and place in refrigerator to marinate overnight. *Tip – you can buy balsamic reduction or you can make your own easily.
2. When ready to grill the chicken breasts, prepare the grill and place them on the grill. Let the chicken breasts cook completely, turning them on their sides once throughout the cooking process. Depending on the size of the chicken breasts this could take longer.
3. Once chicken breasts are cooked, lay 2-3 slices of fresh mozzarella on each chicken breast.
4. Sprinkle fresh basil on top of the mozzarella and close grill for another 4-5 minutes to allow the mozzarella to melt.
5. While chicken is on the grill, prepare your brown rice as directed on the package.
6. Remove chicken from grill and place each chicken breast on a bed of brown rice.
7. Add a handful of sliced tomatoes on top of the chicken.
8. Drizzle each chicken breast and rice with the balsamic reduction.
9. Serve and enjoy HOT!
TIP – Our family likes tomatoes, but not cooked tomatoes, which is why we did not put the tomatoes on the chicken breasts when grilling. If you would like to add tomatoes during the cooking process, simply do this before you sprinkle the basil on the chicken breasts.

Grilled Chicken Caprese
One of my favorite recipes we enjoy this time of the year is a Grilled Chicken Caprese. Delicious grilled chicken topped with fresh Mozzarella, Basil and Tomatoes.
Ingredients
- 2 pounds Tyson® All Natural Boneless Skinless Chicken Breasts
- 2 cups Balsamic reduction
- 16 ounces Fresh Mozzarella sliced
- 1 cup fresh basil leafs chopped
