Creating special mom and daughter moments are important to me. This includes simply curling up on the couch and watching our favorite shows and making a delicious snack. We added these colorful and fun Rainbow Fruit Waffles to our cuddle and watch party last weekend. Turned out to be a perfect few hours with my little lady!

Teagan has grown up seeing me cook and bake creative and “out of the box” recipes and now that she is nearing 7 (WHAT?!?!) she not only loves watching cooking and baking shows but she also loves to help me in the kitchen. And honestly, she is a really great helper. She has a good eye for food photography and a good palate to taste new creations.
Through all of the hustle and bustle of life I find that it is really important to take time with each of my kids and enjoy a little time to connect and make new memories. These moments do not have to be huge or expensive. In fact, some of our favorite times together are simple and at home. Moments away from the crazy and the crowds.
We knew the snow was coming last weekend so we decided it would be a perfect time for some mommy and daughter time watching “Spirit Riding Free” on Netflix together. But to make the time even more fun I decided to surprise Teagan with a little fun in the kitchen before snuggling up on the couch.
All About “Spirit Riding Free” on Netflix
Have you seen “Spirit Riding Free” on Netflix? From the moment we started watching this show we were both hooked. “Spirit Riding Free” is all about a girl named Lucky who lived in a small city in Texas set during the 19th century. It shares her adventures as she bonds with a wild stallion and makes friends with two other girls who also have horses. “Spirit Riding Free” shares the importance of friendship, loyalty, and being a strong female – hello female empowerment! These are the messages I love sharing with Teagan.

Make Your Own Rainbow Fruit Waffles
For our snack I wanted something that was sweet but not over the top and thankfully our picky eater (Miss Teagan) has finally found a new love for fruit! That only took 6 years! HA! And with the love of rainbows going strong I came up with the idea of Rainbow Fruit Waffles with the help of some fresh fruit, warm, fluffy and delicious Eggo Homestyle Waffles and Reddi-Wip Extra Creamy Whipped Cream.
I picked up all of these ingredients at our local Walmart. When buying whipped toppings I always pick up the Reddi-Wip products because Reddi-Wip uses only the best dairy cream in original flavors and has less hydrogenated oils than frozen whipped toppings. All of these ingredients make for a great snack option for us to share while watching “Spirit Riding Free” on Netflix.
Ingredients:
Eggo Homestyle Waffles
Reddi-Wip Extra Creamy Whipped Cream
Strawberries – washed and diced
Cuties – peeled and sectioned
Pineapple – diced
Kiwi – peeled and diced
Blueberries – washed
Directions:
1. Prepare all of the fresh fruit as directed.
2. Toast Eggo Homestyle Waffles for a few minutes in the toaster until they are a delicious golden crisp.
3. Spray a layer of Reddi-Wip Extra Creamy Whipped Cream evenly over each waffle.
4. Create a rainbow with the prepared fruit on top of the Reddi-Wip – Red, Orange, Yellow, Green, Blue! You could add something purple too.
5. Enjoy immediately as the Reddi-Wip will soak into the Eggo quickly!
Almost too pretty to eat! ALMOST. This was a hit in our house and I loved that it was a recipe that Teagan could help me with. She was so proud of her creations and even more excited to dig in.
We snuggled up as the snow fell, grabbed our Rainbow Fruit Waffles and settled in to enjoy “Spirit Riding Free” on Netflix. It was a perfect way to spend a snowy and cold Saturday with my little lady. These moments are so important for both Teagan and me and we have decided to make it a date a few weeks. Simple but memory filled moments are being added to our mom and daughter time from now on!
