Slow Cooker Creamy Italian Chicken Noodle Soup

This Slow Cooker Creamy Italian Chicken Noodle Soup is perfect for those busy weeknights.  A family favorite with a little twist of garlic, spinach, cream and roasted red peppers creating a flavorful and hearty meal with out a lot of work. 

Slow cooker creamy Italian Chicken Noodle Soup

School is about ready to start and I have to be honest, it always takes me a few weeks to adjust to the school routine and one area I really struggle with is dinnertime.  Even though I work from home, depending on schedules it seems like dinner plans always slip through our plans.  One way I try to keep on top of this issue is by finding new and delicious meals to make in the slow cooker.  

This hearty Creamy Italian Chicken Noodle Soup is absolutely perfect for any meal time with the family.  With just a few great ingredients this pasta dish will be a win in your cookbook!  

Slow Cooker Creamy Italian Chicken Noodle Soup

Ingredients:

3 cups chicken broth 
1 boneless, skinless chicken breast 
1 cup fresh spinach – chopped
1/2 cup roasted red peppers – diced
1 tsp parsley
2 tsp minced garlic 
1 tsp oregano 
1/2 tsp salt
1/2 tsp pepper 
1/2 tsp dried basil 
1 cup whole milk 
1 1/2 TBSP cornstarch 
2 cups Rotini pasta
1/3 cup shredded Parmesan cheese

Directions:

1. Add chicken broth, chicken breast, spinach, roasted red peppers, parsley, garlic, oregano, salt, basil and pepper to a slow cooker.
 
2. Cook on high for 3 hours or low for 6 hours until chicken is cooked through. 
 

3. Remove the chicken from the slow cooker and shred with two forks in a bowl.
 
4. Place the shredded chicken back into the slow cooker.

5. In a small mixing bowl, whisk together the milk and corn starch.
 
6. Add the cornstarch mixture and pasta to the slow cooker. 

7. Turn to high and cook for 15-20 minutes until pasta is al dente or cooked to desired tenderness.

8. Turn off slow cooker and stir in the cheese. 
 
9. Serve hot and enjoy!!  

There you have it.  Easy Peasy!  Dinner is served and since this is such a large batch of soup you can even heat this up for left overs for the next day for lunch!  Keep in mind that this can be completely switched up too.  Add in your favorite veggies for a different flavor or more nutrition.  No matter what this cheesy, hearty goodness will have everyone feeling comfort and full in no time!
