While this year has had some unbelievable struggles and challenges there is one part of 2019 that is proving to be amazing. My New Year goal was to focus more on myself. While that might seem a bit selfish; that was absolutely not the intention. Instead, I wanted this year to be filled with opportunities that benefited my whole body; this includes mentally, physically, and emotionally. I know that these changes will allow me to be present and in good health for my family.
Making Big Changes For Me
In taking some big steps to better myself physically and mentally I have been able to find a great work out routine and meal plan that is helping me focus on some huge health changes. I am proud to say that while I have not met my end goal I have successfully lost 63 pounds in 2019!! I am thrilled and pumped to keep going on this amazing journey of ME!
Don’t Forget Those Veggies – Eat Less Meat!
I would love to tell you that through this journey I have been eating all of the colorful goodies from the garden. Look, sometimes I feel like I am a child when it comes to eating my vegetables – I usually choke them down just to make sure the kids see me eating them. Which as you can imagine if that is how I am around the kids I probably am not running the refrigerator and slicing up some peppers and carrots for my afternoon snack. Goals people…goals! One day I will be that person but until then I knew I had to find some easy options to get those veggies in my diet.
I am a pretty busy person. To be honest, I thought that once I started working from home full-time I would have more time to really focus on what foods I was preparing for lunch, I was wrong. It is amazing how quickly a day can get away from me which then leads me to not eating lunch at all. BAD move when it comes to those crazy snacking moments a few hours before dinner.
I decided I had to get some frozen items that I could keep in the freezer for my lunches. While I am not trying to be a Vegan or Vegetarian I am well aware of the amazing qualities and benefits of adding a more vegan and vegetarian diet to my daily routine. So, I went in knowing I wanted some veggie specific items to keep on hand.
Birds Eye OvenRoasters Sheet Pan Vegetables Broccoli & Cauliflower
The first item that I was super excited to try was the Birds Eye OvenRoasters Sheet Pan Vegetables Broccoli & Cauliflower. These perfectly packaged bags of broccoli and cauliflower are deliciously seasoned with fragrant herbs, salt and pepper. I am always a little leary when it comes to the texture of frozen veggies but after having these for two lunch breaks I must say, the flavors and textures are perfect. Healthy Choice Vegan and Vegetarian Power Bowls Falafel & Tahini
I have always been a consumer of the Healthy Choice single serving meals. They are the perfect items to have on hand for those busy days. When I was looking for some great lunch items that included more veggies I stumbled on the Healthy Choice Power Bowls. I was instantly intrigued and excited to try them because I have tried nearly every other frozen Healthy Choice item and loved them all.
Now, I have to be honesty the Falafel & Tahini had me a little worried but after reading the ingredients and nutrition facts I knew I had to give it a try. Guess what…sometimes stepping outside of your normal is the best possible thing to do.
These bowls have delicious crispy falafel, red onions and tomatoes combined with a creamy sesame tahini sauce, on top of a nutrient-rich assortment of whole grains and leafy greens, like red quinoa, black barley and kale. Sounds amazing right? Okay, that tahini and falafel is fantastic and you better believe I will be adding more of the Power Bowls to my freezer for some veggie packed lunch options. I never thought preparing a vegan lunch would be this easy…or delicious!
