With colder weather brings the craving of some good old comfort foods.  This Loaded Cauliflower Casserole is a perfect dish to warm you up from the inside and still get some delicious veggies into your meal.   
 
 

Loaded Cauliflower Casserole

While this is a delicious casserole it is also super easy to make.  Anytime I need a good stick to your ribs comfort food dish this is the one I go for.  Yes, this isn’t a healthy dish but it is a dish that helps me serve my family some veggies.  

Ingredients: 

1 head cauliflower, cut into pieces
4 oz cream cheese
1/2 cup sour cream
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese, divided
3 bacon slices, cooked and chopped
2 green onions, chopped
 

Directions: 

1. Grease a 1-quart casserole dish with nonstick cooking spray. Set aside. Preheat oven to 350 degrees. 
 
2. Use a steamer to cook the cauliflower, about 20 minutes or until soft.
 
 
3. Pour cauliflower in a bowl and gently mash with a fork.  
 
4. In a small saucepan, add cream cheese, sour cream, garlic powder, salt, and pepper. Heat on low, stirring frequently until melted and smooth.
 
 
5. Remove from heat and stir in 1/2 cup of cheese. Add cheese mixture to cauliflower and mix well to evenly coat.
 
 
6. Pour into prepared casserole dish. 
 
7. Top with remaining 1/2 cup shredded cheese and bacon.
 
 
8. Bake for 20 minutes or until heated through. Serve topped with fresh chopped green onions.
