While this is a delicious casserole it is also super easy to make. Anytime I need a good stick to your ribs comfort food dish this is the one I go for. Yes, this isn’t a healthy dish but it is a dish that helps me serve my family some veggies.

Loaded Cauliflower Casserole
With colder weather brings the craving of some good old comfort foods. This Loaded Cauliflower Casserole is a perfect dish to warm you up from the inside and still get some delicious veggies into your meal.
Ingredients
- 1 head cauliflower cut into pieces
- 4 ounce cream cheese
- 1/2 cup sour cream
- 1 tsp garlic powder
- 1 tsp salt
- 1/4 tsp pepper
- 1 cup shredded cheddar cheese
- 3 slices bacon cooked and chopped
- 2 green onions chopped
Instructions

Grease a 1-quart casserole dish with nonstick cooking spray. Set aside. Preheat oven to 350 degrees.

Use a steamer to cook the cauliflower, about 20 minutes or until soft.

Pour cauliflower in a bowl and gently mash with a fork.

In a small saucepan, add cream cheese, sour cream, garlic powder, salt, and pepper. Heat on low, stirring frequently until melted and smooth.

Remove from heat and stir in 1/2 cup of cheese. Add cheese mixture to cauliflower and mix well to evenly coat.

Pour into prepared casserole dish.

Top with remaining 1/2 cup shredded cheese and bacon.

Bake for 20 minutes or until heated through. Serve topped with fresh chopped green onions.
