Easy Crispy Baked Fries

I am not a big potato fan, don’t get me wrong, I love eating mashed potatoes and fries but I hate peeling potatoes…with a passion!  So, when I picked up my weekly produce box from 5280 Produce and saw a huge bag of potatoes I knew I would have to use them.  I decided to start with something easy and yummy.  FRIES!!  The kids love fries but when I make them, I usually just get the frozen fries at the store.

I decided to try something a little different and I have to say, these easy crispy baked fries are a hit with my kids and I will be making them from now on!!  So easy and so good!  Oh and I didn’t have to peel potatoes!!!  WIN!!!

Ingredients:

4 Russet Potatoes
3 TBSP Olive Oil
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp salt
1 TBSP pepper
3 TBSP shredded Parmesan Cheese

Directions:

1. Preheat oven to 390 degrees and prepare a baking sheet with foil.  Spray foil with cooking spray.

2. Slice each potato in half lengthwise. Then cut the halves into thirds or fourths (depending on the size of the potato).  I left the skin on the potatoes but you can peel them if you prefer.

3.  In a small bowl, combine all of the dry ingredients – onion powder, garlic powder, paprika, salt, pepper and Parmesan Cheese.

4.  Place potato wedges in a large mixing bowl and pour the oil over the wedges.  Using your hands, make sure the wedges are completely covered with oil.

5.  Add dry ingredients to the potatoes and making sure each wedge has seasoning.

6.  Spread potato wedges over the prepared baking sheet in a single layer.  Sprinkle additional seasoning over wedges if desired.

7. Bake for about 40 minutes, flipping them halfway through until they are golden brown and crispy.

8.  Serve hot from the oven with your favorite dipping sauce!  ENJOY!
