I have a sweet tooth and most days chocolate is what tackles that sweet tooth but during the summer I find that I am searching for something other than chocolate.  Here in Colorado we are set to have nearly 20 days of above 90 degree days and goodness I am not ready for that!  But I decided that sweet treat might make it a better few days.  This yummy Strawberry Lemonade Poke Cake is what hits the spot on a hot day!  Easy to make, feeds a good crowd and is refreshing for a summer day! 

How To Make A Perfect Summer Poke Cake

This delicious dessert is a great way to bring a summer favorite, Strawberry Lemonade, to your dessert table.  Because the cake is chilled it is a great option for those hot summer days, refreshing!!  No need to spend hours preparing this cake either…so easy!! 

Strawberry Lemonade Poke Cake

Ingredients:

1 box of Strawberry Cake Mix (plus eggs and oil according to package directions)
2 cups lemonade
1 box of Lemon Jell-o 
1 container of Cool Whip 
10-15 Strawberries, sliced 

Directions:

1. Prepare a 9×13 baking pan with cooking spray and preheat oven.

2.  Make the cake as directed on the box but making sure you substitute an equal amount of lemonade for water.  No water should be used when making your cake.

3. One cake is baked,  let the cake cool for 20 minutes.  

4. Poke the cake with a large fork about 1/2″ apart, covering the entire surface.

5. Mix the lemon Jell-o with 1 cup of boiling water until Jell-o is completely dissolved.  

6. Add 1/2 cup of cold lemonade to the Jell-o and mix well.  

7. Pour the Jell-o mix slowly over the cake allowing the Jell-O to fill in the “pokes” in the cake.

8. Cover cake and refrigerate it for 3-4 hours.

9.  Prior to serving, spread the Cool Whip over the cake and place sliced strawberries on top of the Cool Whip.

10.  Slice and ENJOY!

Perfect Summertime Dessert

Adding the lemonade to the cake mix and Jell-O makes this poke cake fantastic.  The lemonade and strawberry flavors complement each other and the Cool Whip makes it super refreshing and delicious!  Both of the kids LOVED this cake and I probably enjoyed it too much too!  A must try for sure, especially if you have people in your circle that might not enjoy chocolate as much as normal people!  HA!
