I am not currently on a specific diet but I will say that with the upcoming holidays I sure am being a little more careful with what I put into my body so I can enjoy some of my favorite holiday treats. I was first introduced to this yummy side dish I was with a friend and her family. Her mom is a fantastic cook and baker so when she prepared our dinner she surprised us with this twist on a favorite.
I have to be honest, I was a little nervous to try it but it was so good and I didn’t even miss the potatoes. The yummy dressing is that same dressing you would use for a traditional potato salad but HOLD THE POTATOES! I have never made my own potato salad, weird I know so this was a first for me for many reasons. This is a great side dish for dinner or to have in the refrigerator for a yummy lunch!
Cauliflower Potato Salad – Hold The Potatoes
Ingredients:
1 1/2 cup Miracle Whip
2 TBSP yellow mustard
1 tsp sugar
1 TBSP Vinegar
3/4 TBSP celery seed
1/2 tsp black pepper
1 head Cauliflower
3 celery stalks, chopped
3/4 cup red onion, chopped
3 hard boiled eggs, sliced
Directions:
1. Prepare cauliflower by cutting it into bit size pieces and steaming. Do not over steam the cauliflower as it will become too mushy for the “potato salad” consistency. I steamed mine for only a few minutes in the microwave.
2. Place steamed cauliflower in the refrigerator to cool while preparing the rest of the ingredients.
3. Hard boil three eggs and slice into bite size pieces when cooled.
4. Chop onion and celery into bite size pieces, set aside.
5. Once cauliflower is cooled, add to a medium size bowl and add eggs, celery and onion to the bowl. Toss together to combine.
6. Add sugar, vinegar, pepper and celery seed to veggies and mix well.
7. In a small bowl, combine mustard and Miracle Whip and pour over the veggie mixture. Carefully mix together until all of the veggies are covered with the dressing.
8. Cover bowl with plastic wrap and chill in the refrigerator for at least 1 hour prior to serving.
9. ENJOY chilled!

Delicious Cauliflower Salad Recipe
The hardest part about this recipe is making sure you do not over cook the cauliflower. Steam it only for a few minutes so it doesn’t get too mushy! Like potato salad, you want this salad to have a little crunch!!! I believe this mock potato salad is the perfect side dish to bring to your next BBQ or lunch.
