Easy Cucumber Salad – WW Points Included
I am trying to get on track with my eating and that includes getting more veggies in my diet. I really struggle with this. Most of my veggies have to have dressing or dips with them, kind of defeats the purpose. As I was making my meal plan for the week I remembered a cucumber salad recipe that my mom used to make. It is flavorful and does have a “dressing” but on the WW plan it is still a very low point option. I decided to make it again and add a few additions for some extra flavor!
Ingredients:
2 large cucumbers, thinly sliced
1 onion, sliced
1/3 cup apple cider vinegar
1/4 cup water
1 TBSP sugar
1 TBSP Dill Weed
1 tsp fine sea salt
1 tsp black pepper
Directions:
1. Slice each cucumber into very thin slices and add to a large bowl.
2. Slice the onion into half moons and add to the bowl. Toss to combine.
3. In a medium mixing bowl whisk together the apple cider vinegar, water, sugar, dill weed, salt and pepper into a nice “dressing”.
4. Pour the dressing mixture over the cucumber and onion and toss to fully coat and combine.
5. Cover the salad with foil or a lid. Chill salad for at least 1 hour prior to serving. Keep the salad in the fridge until ready to serve.

I calculated this recipe using the recipe builder on the WW app. I am currently on the blue program. For 4 servings of this delicious, easy to make cucumber salad is only 1 point!! And if you are calorie counting it is super low in calories too!! I don’t know about you but onions and cucumbers always fill me up too so that helps in this area of weight loss and healthier choices. Make sure you add this to your meal plan soon!
