To Turkey or Not To Turkey…That Is The Question
How many of you always have leftover turkey from Thanksgiving and Christmas? Oh we sure do! Let me back up first though – I honestly had no idea that some families do not enjoy Turkey on both Thanksgiving and Christmas! WHAT!? Is that true??
Okay, sorry, back to my recipe that I now know will be THE recipe we make with all of our leftover turkey from the holidays.
How To Make Turkey Pot Pie Soup
4 TBSP butter
1 small yellow onion – chopped
2 – 3 celery stalks – chopped
2 – 3 carrots – peeled and chopped
3 cloves garlic, minced
2 bay leaves
3 medium potatoes, diced
1/4 cup flour
14 ounces chicken broth
1 1/2 cup milk
1 tsp thyme
2 cups shredded/chopped turkey
1/2 cup frozen peas
1/2 cup frozen corn
salt and pepper for taste

Turkey Pot Pie Soup is the best way to use leftover turkey! Easy to make in the instant pot, slow cooker or on the stove-it's healthy & tasty!
- 4 TBSP butter
- 1 small yellow onion chopped
- 3 celery stalks chopped
- 3 carrots peeled & chopped
- 3 garlic cloves minced
- 2 bay leaves
- 3 medium potatoes peeled, diced
- 1/4 cup flour
- 14 ounces chicken broth
- 1 1/2 cup milk
- 1 tsp thyme
- 2 cups turkey shredded
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- salt and pepper for taste
- Oyster crackers
- Optional ingredients – frozen green beans, mushrooms and mushrooms
In a large soup pot melt butter.
Once butter is melted add the chopped onion, celery and carrots to the pot. Cook the veggies until they are tender. This should take about 5 minutes.
Add the garlic, bay leaves and potatoes to the pot.
Add flour to pot and stir in to make sure it coats all of the ingredients. The flour will start to dissolve.
Add the chicken broth, milk, and thyme to the soup pot.
Stir and reduce the heat to low.
Let the soup simmer for 20 – 25 minutes.
Stir in the turkey, peas, and corn – as well as any of the optional ingredients listed above.
Season with salt and pepper, to taste and let the soup simmer for another 10 minutes.
If the soup is too thick, add another 1/2 cup of milk to the soup.
Remove Bay Leaves and serve HOT topped with oyster crackers. ENJOY!
