I believe that a Thanksgiving or Christmas celebration with out Pecan Pie just isn’t a celebration. This super easy Pecan Pie recipe is a family favorite and a must have for every holiday celebration!
Ingredients:
(makes 2 pies)
2 refrigerated pie crusts
2 cups dark Karo Syrup
2 cups raw pecans, chopped
1 1/3 cup sugar
6 eggs
2 TBSP McCormick® pure vanilla extract
dash of salt
Directions:
1. Preheat oven to 375 degrees.
2. Prepare pie crusts in tins or pie pans.
3. Combine Karo syrup, pecans, granulated sugar, eggs, McCormick® pure vanilla extract and salt into a large mixing bowl.
4. Using a hand mixer on slow, beat the mixture for 2 minutes.
5. Pour half of the mixture into one pie crust and the rest of the mixture in the second pie crust.
6. Bake for 40 minutes, make sure pie does not “wiggle” when done baking, if so, bake for another 2-5 minutes.
7. Remove from oven and let sit for about 5 minutes before cutting and enjoying!
I am tackling a family favorite-pecan pie-and hoping that, after some practice, I will get family approval. This is a big jump for me and my kitchen – Pecan Pie. You see, my grandmother was THE pecan pie maker in our family and since her death no one has made a homemade pecan pie. I wish I could fully describe the huge shoes I need to fill here; she was simply amazing, both in life and in the kitchen.

This does look good I’ve had dark Karo syrup for years, and have been puzzled what to do with it, this is perfect, and haven’t ever made a pecan pie before.

Pecan pie is definitely one of my absolute favorites! The last recipe I tried was very good but not stellar, and I don’t remember that one having anywhere near as much vanilla extract as this one does. I bet that makes a difference – I need to try this recipe next!
