Soup and chili season is here!!  I do love a good soup but a hearty chili truly warms you up from the inside.  By creating this delicious buffalo chicken chili I am able to combine some of my favorite flavors for fall!  Warm up with the Slow Cooker Low Carb Buffalo Chicken Chili.

Slow Cooker Low Carb Buffalo Chicken Chili

I am not one that is focused on low carb recipes but I do find that a heavy dish like chili can weigh you down.  This option of a low carb meal is not only delicious but so easy to make.  Hello Slow Cooker!!  I have missed my slow cooker, seems like I only use it during the cold weather months.  Let’s get cooking!  

Ingredients:

2 stalks celery, diced
1 small onion, diced
4 cups Low sodium chicken broth
1 (13.5 ounce) can coconut milk
1 packet ranch seasoning mix
½ cup wing sauce
2 pounds boneless, skinless chicken thighs, cut into bite size pieces
1 to 2 tsp xanthan gum, for thickening

Directions:

1. Place all ingredients EXCEPT xanthan gum into the slow cooker. Stir to combine.


2. Cover the slow cooker and cook on high for 3 hours.

3. Stir in xanthan gum, if desired, and allow to cook an additional 15 minutes or until thickened.

Ridiculously easy!!  I also love that this chili makes enough for left overs!

Ingredients
