Irish Oatmeal Muffins
Did you know that the Irish often cook their oatmeal all night long to achieve a rich, creamy texture? This muffin recipe mocks that effect. Before you start this recipe, please make sure you look at the first step – soaking the oats. This recipe is easy but the soaking of the oats does make this process a bit longer than normal.
How To Prepare Irish Oatmeal Muffins?
Time to get baking! I wanted to make these for a little St. Patrick’s Day treat. I have enjoyed trying some St. Patrick’s Day themed recipes in the past but this year I wanted to focus more on the Irish part of this time of the year! I think these turned out perfect and I cannot wait to make them again soon.
Ingredients:
1 cup dry oatmeal
1 cup whole milk
1 TBSP white vinegar
3/4 cup brown sugar
1/4 cup vegetable oil
1 1/4 cup flour
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 egg
Directions:
1. Prepare a muffin tin with cupcake liners and preheat the oven to 375 degrees.
2. In a medium bowl combine whole milk and vinegar. This process is to sour the milk. You could also use buttermilk if you have it on hand.
3. Add the oats to the mixture. Stir well, cover, and let the oats/milk mixture rest in the refrigerator for at least 6 hours or overnight. This will help the oats get soft.
4. Once the oats have soaked, mix in the egg.
5. Add the sugar and oil to the mixture and beat until smooth.
6. Add in the flour, salt, baking powder, and baking soda and stir until well combined.
7. Fill the muffin tins 3/4 full with batter.
8. Bake at 375 degrees for 15-20 minutes or until the muffin top springs back when gently touched and the muffins are lightly browning around the edges.
Tip – These muffins tend to be very moist, so a little over baked is better than under baked.
Jazz Up Your Irish Oatmeal Muffins
These are delicious just the way I made them but you can also jazz up the Irish Oatmeal Muffins with some simple additions to the batter.
