Ham Tetrazzini is rich, creamy, and cheesy with lots of cubed ham and a few mushrooms and peas. Great for using up leftover ham this holiday season!
I shared a super easy recipe to use when you have turkey leftovers from the holidays, Turkey Pot Pie Soup. Today I am sharing another great leftover recipe option but this time you will want to use your leftover ham. I kind of went over our traditions in the pot pie recipe post but I will share it here as well.
For Thanksgiving and Christmas my family enjoys a full turkey dinner and all its fixings but we also celebrate New Years Day with a lovely honey baked ham. Traditionally we also enjoy cabbage in hopes of bringing us lots of money and black eyed peas for lots of luck in the New Year! And just like Thanksgiving and Christmas, we end up with a lot of leftovers, especially ham. This year instead of the normal leftover plates I decided to make something delicious with our leftover honey baked ham and it turned out fantastic!
Ham Tetrazzini
Ingredients:
8 ounces spaghetti
2 TBSP butter
1 medium onion – diced
1 can cream of mushroom soup
3/4 cup milk
1/2 tsp black pepper
2 cups ham – diced/sliced
1 cup peas (cooked)
1 cup shredded cheddar cheese
1/4 cup shredded Parmesan cheese
6 ounces mushrooms, sliced (OPTIONAL)
Directions:
1. Prepare spaghetti as directed on the package.
2. While spaghetti is cooking, start preparing the veggies and ham for the dish.
3. Melt butter in a large skillet and add the onion to cook. This is when you would add your sliced mushrooms as well. They should cook for at least 5 minutes until soft and browned.
4. Add mushroom soup, milk and pepper to the skillet and mix completely.
5. Add ham, peas, cheddar cheese, and Parmesan cheese and stir and cook over medium heat until cheese is melted.
6. Drain pasta and carefully add cooked pasta to the skillet. Mix in pasta and cover completely with sauce. Let cook for an additional 5 minutes while continuously stirring the mixture.
7. Season to taste with salt and serve HOT with a side of garlic bread. Enjoy!!
I made this dish in about 30 minutes, prep included. I have added this recipe to our normal meal rotation even when we do not have left over ham. It will be so easy to pick up all of these ingredients and throwing this in the skillet on a busy week night plus it cant easily be doubled and it is the perfect leftover lunch option! YUM!
As stated above, adding mushrooms is also an option – Jeremy cannot eat whole/sliced mushrooms so we always have to make those optional. I did use frozen peas for this recipe and just threw them in the microwave while everything else was cooking. Again, super easy recipe that was a great dinner for everyone!
