I love a good sheet pan meal and this summer ready Hawaiian Sheet Pan Chicken is one of my favorites. Flavorful, colorful and full of veggies – a kid approved meal that is delicious and easy to make.
I have a confession, I do not have an outdoor grill, and I have never been a grill master but I do love a good Hawaiian Grilled Chicken meal. I had to find a way to enjoy that sweet BBQ sauce, onions, peppers, chicken and PINEAPPLE! Until I purchase that grill on my wish list and learn the skills of a grill master I will continue to make my favorite grilled meals into easy sheet pan recipes!
Hawaiian Sheet Pan Chicken
Why I Love Sheet Pan Meals
Have you been introduced to the world of sheet pan meal cookin’? A sheet pan meal provides a delicious dinner in a reasonable amount of time and on just one pan!! Not to mention the food gets golden brown from the hot oven and cleanup is relatively painless. Less prep, less time watching the food cook and less clean up! YES PLEASE. Sheet pan meals are the perfect busy weekend meal option.
Ingredients:
1 pound boneless skinless chicken breast – cubed
1 red bell pepper – diced
1 orange bell pepper – diced
1/2 cup red onion – diced
1 cup pineapple chunks – drained
1/2 cup Hawaiian BBQ Sauce
1 TBSP olive oil
1 TBSP black pepper
1/2 tsp salt
Juice of 1 lime
Directions:
1. Preheat oven to 350 degrees and prepare a baking sheet with cooking spray. Set aside.
2. Prepare veggies and chicken. Bite sized pieces are the best for this recipe.
3. Place chicken pieces into medium bowl and season chicken with salt, pepper and olive oil.
4. Next add diced bell peppers and red onion to the mixing bowl and mix chicken and veggies together.
5. Add the Hawaiian BBQ sauce to the mixing bowl and combine well making sure the sauce coats all of the ingredients well.
6. Spread chicken and veggies out on the baking sheet, making sure that they are not layered so the ingredients cook at the same temperature.
7. Bake in the oven for 20 minutes. Remove baking sheet from the oven and then add pineapple chunks before returning to oven for 15-20 more minutes or until chicken reaches an internal temperature of 165 degrees.
8. Remove baking sheet from oven and squeeze lime juice over sheet pan.
9. Serve HOT over rice or cauliflower rice OR you can enjoy the chicken and veggies on their own.
With the exception of the cutting board, mixing bowl and pan to make rice this truly is a one pan meal and I love it. So colorful and sweet. A great way to get the kids to enjoy their veggies for dinner. I like this recipe because it usually gives me plenty to enjoy for a lunch too!

Finding dinners that the whole family enjoy can be difficult but a meal like this will not only make your evening go a little smoother but the whole family will enjoy dinner! The pineapple is a great addition and makes the kids super happy to have their fruit and veggies served together.
