These maple syrup & bacon filled pancake muffins will make your family smile when you tell them it is time to get out of bed! Breakfast is served with these easy maple bacon pancake muffins.
I have talked about this before…breakfast wars. Some of our issues with breakfast is the kids just being plain picky but I have to take some responsibility here as well. I get into a breakfast routine and end up making the same things over and over. The kids get bored, they don’t eat, and then the breakfast wars begin! Ugh…not a fun way to start the morning for anyone especially on a school or work day.
Recently, I decided to take our pancake recipe and turn them into pancake muffins. That worked well so I decided to make pancake muffin that included bacon (the kids favorite breakfast protein) and some maple syrup. Talk about a full breakfast in one little muffin! While some might think this recipe is too sweet and full of not so wholesome ingredients let me point out that we use whole wheat flour in our pancake batter and for this particular recipe we used turkey bacon and REAL maple syrup.
Maple Bacon Pancake Muffins
Ingredients:
1 1/2 cup whole wheat flour
2 tsp baking powder
1/4 tsp baking soda
1 TBSP cinnamon
2 TBSP sugar
1/4 tsp salt
1 egg
1 cup milk
1/4 cup REAL maple syrup
2 TBSP oil
2 tsp vanilla
1/2 cup turkey bacon, crumbled (save some for topping)
Directions:
1. Preheat oven to 400 degrees and prepare a muffin tin with cooking spray.
2. In a medium mixing bowl combine all dry ingredients – flour, sugar, baking soda, baking powder, salt, and cinnamon.
3. In a separate mixing bowl combine all wet ingredients – egg, milk, syrup, oil and vanilla.
4. Carefully add egg and milk batter into the dry ingredients. Stir to combine.
5. Once batter is mixed well, add in bacon crumbles and stir to combine.
6. Spoon batter into muffin tins.
7. Bake muffins for 12-15 minutes or until golden brown.
8. When ready to serve, drizzle each muffin with some maple syrup and sprinkle some bacon crumbles on top. ENJOY!!
9. These pancake muffins can be kept in a sealed container for a few days – add maple syrup drizzle and bacon crumbles when ready to enjoy!
These maple bacon pancake muffins are so yummy. Not too sweet and not too dense. My kids enjoyed having the bacon baked right into the pancake muffins and then when we tried them with maple syrup over the top of the muffins everyone LOVED them. I know that these muffins will be making a second round during our breakfast meal plans!! YUMMY! You have to give this a try!
