Are You A Coleslaw Snob Like Me?
This time of the year I am always looking for new side dishes to try for summertime. In my opinion, the best side dishes in the heat of the summer are cold dishes. Coleslaw is a very traditional dish that a lot of people add to their summer BBQ menu. Coleslaw is usually a big hit because most people enjoy coleslaw and it is easy to make or even purchase pre-made a the deli counter. Now, that all being said, I think I might be a slaw snob. I am very picky about coleslaw. It has to be crunchy and it has to be creamy, oh and not too much vinegar! Told you…I’m a slaw snob!
Delicious Side Dish: Copycat KFC Coleslaw
Even though I have high expectations for any coleslaw I enjoy I do have a favorite slaw that comes to mind. Might be the best coleslaw you can buy?? I know, that is a big statement. KFC Coleslaw! Oh I love it. The dressing is sweet and has the perfect amount of vinegar. The cabbage isn’t just roughly chopped or shredded…and the crunch is perfection. Okay, well, instead of heading to your local KFC I am excited to share this delicious copycat KFC Coleslaw recipe. It will not disappoint and I promise it pretty much mocks the very best Coleslaw on the market! YUMMY!!!
Ingredients:
1 head green cabbage – finely chopped using food processor
1 carrot – shredded
1/4 cup white onion – finely chopped using food processor
1/3 cup sugar
1/2 cup mayonnaise
1/3 cup buttermilk
2 TBSP lemon juice
1 1/2 TBSP white vinegar
1/2 tsp salt
1/2 tsp pepper
Instructions:
1. In a medium mixing bowl whisk together the sugar, mayo, buttermilk, lemon juice, vinegar, salt and pepper until completely combined into a delicious dressing.
2. Prepare all of the veggies. Using a grater shredded the carrot and using a food processor finely chop the cabbage and onion.
3. Place all prepared veggies in a large bowl and combine.
4. Carefully pour dressing over the veggies and mix together until the dressing covers all of the veggies.
5. Cover and let chill in the fridge for at least 2 hours (or as many as 8) before serving. ENJOY!
Copycat KFC Coleslaw Recipe Tips:
- Store leftovers covered in the fridge and enjoy within 2 days.
- Not a fan of buttermilk? Use whole milk instead.
- Can use prepared bagged coleslaw but it will not have the same texture as using the food processor.
- Do not prepare extra dressing – once slaw has chilled more liquid will be created in the bowl. It will be too runny if you add any extra dressing.
- Recipe can easily be cut in half or even doubled.
