Low-Carb Cauliflower Recipes
I have to be honest, the idea of using cauliflower in place of some of my favorite ingredients seems a little weird but now that I am back on my health and fitness journey I am trying really hard to get more veggies and fruit into my daily routine. Having some yummy low-carb recipes is super important for me to continue this goal I have!
I started getting creative with Cauliflower just a few months ago and I must say, the recipes I have tried are pretty dang good. The Loaded Cauliflower Nachos are now a weekly meal for me and I LOVE it. But you must try the yummy Cauliflower Potato Salad too – maybe not as healthy but super delicious!
I am not a big lover of SUPER spicy but when I am craving chicken, I do like a little kick. I decided to try my hand at some Buffalo Cauliflower Nuggets and once again I am really proud of this yummy meal option!
Buffalo Cauliflower Nuggets
Ingredients:
1 large Cauliflower – cut into bite size pieces
2 TBSP Olive Oil
1 TBSP Garlic Powder
1 tsp salt
1 tsp black pepper
1/4 cup Buffalo Sauce
Directions:
1. Preheat oven to 450 degrees and line a baking sheet with foil, set aside.
2. Prepare cauliflower by washing and cutting into bite size pieces.
3. Place cauliflower pieces into a medium bowl and set aside.
4. In a small bowl combine the garlic powder, salt and pepper.
5. Drizzle olive oil over cauliflower and toss making sure to coat each piece with oil.
6. Sprinkle spices over cauliflower while tossing carefully to make sure each piece of cauliflower is seasoned.
7. Spread seasoned cauliflower on prepared baking sheet, making sure to space out the pieces so that they roast instead of steam.
8. Bake seasoned cauliflower for about 15 minutes – the cauliflower will brown and get tender.
9. Place baked cauliflower back into the bowl and pour buffalo sauce over the cauliflower covering each piece with buffalo sauce. You can add as much or as little as you desire.
10. Serve HOT with a side of blue cheese or ranch. ENJOY!!
Delicious and Spicy!
These are so good. I have enjoyed this recipe a few times either as a full meal or as an appetizer. No matter how I have enjoyed the Buffalo Cauliflower Nuggets they have been great. My biggest tip is to make sure you do not OVER BAKE your cauliflower. When adding a wet sauce, you want to make sure that your cauliflower isn’t too tender and mushy. The 15 minute mark gives some of the cauliflower a nice “grilled” texture and holds the sauce well.
Maybe you are not a buffalo sauce fan? Try a yummy BBQ or Asian Sauce, I know it will taste fantastic too! Time to get creative with our veggies!
