I have to be honest, I always thought that Twice Baked Potatoes were super hard to make and such a treat when I had them at a restaurant or event. Little did I know that Twice Baked Potatoes are actually pretty easy to make and are a great side dish option. I am excited to share how to make twice baked potatoes. A creamy, cheesy, crispy recipe for a perfect side dish. Filled with yummy ingredients and loaded with flavor, they are sure to be a hit!
How To Make Twice Baked Potatoes
Potatoes are my favorite side dish – fries, mashed, tots, baked, grilled, or salad. I am not picky but what makes a potato side dish seconds worthy is cheesy, creamy goodness. Twice Baked Potatoes are exactly this and it might be a little dangerous to learn how simple it really is to make twice baked potatoes!
The Perfect Side Dish
Ingredients:
Medium size potatoes, washed
2 TBSP butter
½ cup sour cream
½ cup cheddar cheese, shredded
½ cup bacon, cooked & chopped
2 TBSP chives
Salt & pepper to taste
Instructions:
1. Preheat oven to 400 degrees. Place the washed potatoes on a baking sheet and bake in the oven until fork tender – about 45 minutes.
2. Carefully cut the potatoes in half lengthwise and let them cool off a bit.
3. Scoop out the potato from the skin and place it into a medium size bowl. Making sure to be careful to keep the skins intact!
4. In the medium size bowl, mix in the butter, sour cream, cheese, bacon, and chives into the potatoes until well combined and smooth.
5. Spoon the mixture back into the potato skins and top with a little more shredded cheese and bacon.
6. Warm in the in the oven at 400 degrees for about 15 minutes.
7. Garnish each potato with chives, serve & enjoy hot out of the oven!
I am so pleased with how these turned out. Delicious and a perfect warm you up from the inside side dish to serve with any meal. If you have picky eaters, you can customize what the mix ins or toppings are as well. Get creative and you can even sneak in some extra veggies! Mom win!!
